Bradbury & Kopp [57] patented the production of two different extracts from cocoa shells; theobromine fraction and polyphenol enriched portion. The defatted cocoa shells can be extracted with an answer of acetone/water, and then the acetone should be divided, leaving just the aqueous solution.
